Little Calzoni

Calzoni are a firm favourite amongst pizza connoisseurs around the world, so it’s no wonder that little calzoni are very popular and make a delicious appetiser for your friends and family. Try our recipe for full-sized Calzoni! Can’t get enough?

  • Shop-bought pizza dough – or follow our own recipe for delicious pizza dough
  • Salt and pepper
  • Tomatoes
  • Olives
  • Prosciutto ham
  • Radicchio
  • Diced gorgonzola
  • Onions
  • Potatoes
  • Diced mozzarella


  1. Prepare the fillings:
  2. Classic filling: combine the olive oil, salt and pepper to the tomato purée to taste. Then, add the diced mozzarella. Cut the prosciutto and olives into small pieces and combine.
  3. Radicchio filling: sauté the vegetables with a small amount of olive oil and let it shrivel, then add the diced gorgonzola.
  4. Onion filling: sauté the onions with a little olive oil. In the meantime, boil the potatoes, then combine with the onion and sauté for another 5 minutes. After this, add drained and diced mozzarella.
  5. Roll the dough until around a 3mm thickness.
  6. Cut the dough into long rectangles.
  7. Spoon small amounts of filling into the centre of the rectangle.
  8. Fold the dough over itself to cover the filling.
  9. Using a 10cm cutter or the brim of a pint glass, cut the dough around the filling.
  10. Press the edges of the circular dough pieces with a fork to seal the sides.
  11. Brush lightly with olive oil and bake in the wood-fired oven at 210°-230°C for 25/30 minutes.
  12. Ready to serve immediately!
