Gyros With Greek Chicken & Tzatziki Sauce

Cooking your Mediterranean chicken in a Wood Fired Oven adds a deliciously smoky flavour to your meals, upgrading your cooking experience to serve authentic Mediterranean dishes. Our recipe for Greek Chicken Gyros with a homemade Tzatziki sauce combines flavoursome meat with a refreshing sauce to leave friends and family coming back for more!


Preparation and Cooking Time: 45 minutes


Serves: 6

Ingredients

  • For the Chicken:
  • 3 diced chicken breasts
  • 60g Greek Yogurt
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1½ teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons oregano
  • For the Tzatziki Sauce:
  • ½ grated cucumber
  • 2 crushed garlic cloves
  • 2 tablespoons of extra virgin olive oil
  • 500g strained Greek yoghurt
  • Small bunch of finely chopped fresh dill
  • A few springs of finely chopped fresh mint
  • Squeezed juice of 1 lemon
  • Salad
  • 3 diced tomatoes
  • 2 peeled and diced cucumbers
  • 1/4 diced red onion
  • 2 tablespoons of finely chopped fresh parsley
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste

  • Don’t forget your pitas to put all these delicious ingredients in! you’ll need around 6-8 pitas. Upgrade your Gyros with homemade pita –

Method

  1. Combine all the ingredients from our chicken list into a bag and allow to marinate in the fridge for at least 30 minutes, but ideally 24 hours.
  2. Strain the grated cucumber to remove as much water as possible. Once strained, spread the cucumber across a tea-towel and pat dry – this is the most important step to getting deliciously creamy Tzatziki sauce!
  3. Combine the crushed garlic and 2 tablespoons of olive oil in a dish, then add the cucumber.
  4. Fold the garlic and cucumber mixture into the 500g of Greek Yoghurt, then stir until evenly distributed.
  5. Add the dill and mint to the yoghurt mixture along with the lemon juice and season with salt to taste.
  6. In a separate bowl, combine the ingredients for the Greek salad and stir to coat everything evenly.
  7. Once the chicken has been marinated for the desired time, remove from the fridge to allow the chicken to rest at room temperature for 30 minutes.
  8. Once rested, skewer the chicken and place in the Wood Fired Oven for 5-10 minutes or until cooked through.
  9. Place the chicken in the pita bread and top with the Tzatziki sauce and Greek salad.
