Flammkuchen - Crispy Thin Crust Pizza

Thin and crispy crust pizza lovers, this pizza is for you! Hailing from Germany, Flammkuchen is characterized by its incredibly thin, crisp, and blistered crust.
The 2 main differences are that the dough is rolled out using a rolling pin and uses crème fraîche instead of a tomato sauce base.

Preparation and Cooking Time: 30 minutes

  • Shop-bought pizza dough – or follow our own recipe for delicious pizza dough
  • 12 strips of bacon, cut into small squares or cubes
  • 2 onions, finely sliced into rings
  • 250g crème fraiche
  • 230g natural Greek Yoghurt
  • 1 teaspoon nutmeg
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • Grated cheese
  • Fresh thyme


  1. Combine the crème fraiche with the natural yoghurt, nutmeg, salt, and thyme.
  2. Stretch the pizza dough evenly to create a thin crust.
  3. Spread 3-4 tablespoons crème fraiche mix across the pizza base.
  4. Scatter your chosen toppings evenly across the pizza.
  5. Sprinkle with the spring onions and the cheese and season with black pepper to taste.
  6. Place in your Wood Fired Pizza Oven until the cheese is bubbly and the crust is brown and crispy.
