Chicago Deep Dish Pizza

The Chicago Deep Dish Pan Pizza turns pizza on its head, literally! The layers of toppings are built in the opposite order to a normal pizza. For the best results, use a cast iron pan to cook the pizza in your Wood Fired Oven.


Preparation and Cooking Time: 45 minutes


Serves: 12

Ingredients

  • Shop-bought pizza dough – or follow our own recipe for delicious pizza dough
  • 340g sliced mozzarella cheese
  • 1450g cooked and sliced Italian sausage (sweet or hot); or 3 cups of sautéed vegetables of your choice.
  • 800g lightly crushed plum tomatoes; or 800g diced or chopped tomatoes
  • (optional) 2 to 4 peeled and minced garlic cloves
  • (optional) 1 tablespoon sugar
  • (optional) 1 to 2 teaspoons Pizza Seasoning or mixed dried Italian herbs
  • Olive oil

Method

  1. Grease your cast-iron pan with non-stick spray, then 3-4 tablespoons of olive oil. Tilt the pan to allow the oil to cover the bottom, and partway up the sides.
  2. Stretch the dough with your hands to make a large circle.
  3. Lay the dough in the pan, and gently push it towards the edges.
  4. Allow to rest for 15 minutes.
  5. Bake the crust for 10 minutes, to allow it to set. While the crust is baking, prepare the filling.
  6. Drain the tomatoes and combine them with the pizza seasoning or dried herbs.
  7. Add the optional garlic and sugar.
  8. Cover the bottom of the crust with the sliced mozzarella, fanning it into the crust.
  9. Add the sausage or sautéed vegetables.
  10. Cover the toppings with the tomato mixture.
  11. Sprinkle the grated parmesan and drizzle with olive oil.
  12. Bake your pizza in the Wood Fired Pizza Oven until the filling is bubbly and the parmesan topping is golden-brown.
  13. Remove from the oven and transfer the pizza from the pan to a rack.
  14. Allow to cool for around 15 minutes, or longer to prevent the filling from spilling when you cut into it.
